A friendly guide to specialty grocers, unusual ingredients, and rapid air-fryer/toast recipes!

Primary Sources: Indian Grocery, Masala Mart, Sabzi Mandi

• Amchur: Dried green mango powder. Adds a sharp, fruity, puckering sourness to fillings without adding liquid.
• Panch Phoron: Bengali 5-spice whole seed blend (cumin, brown mustard, fenugreek, nigella, and fennel). Highly fragrant when fried in hot oil until they pop.
• Fenugreek (Seeds or Dried Leaves that ya need! I can bring some~): Provides a distinct, sweet-savoury, maple-like aroma foundational to rich gravies. Usually sold as dried leaves (labeled *Kasuri Methi*) or whole yellow seeds.
• Fresh Curry Leaves: Entirely different from powder. Bright, citrusy, and distinctly herbal. Must be sizzled in oil or ghee at the very start of cooking.
• Jaggery (Gur): Raw, unrefined cane sugar blocks with a deep molasses flavour. Used for balancing sharp tamarind profiles.

• Century Egg (Pei daan / Pidan): Duck eggs preserved in clay and ash. The whites turn into a dark, translucent amber jelly, while the yolk becomes creamy, grey-green, and deeply savoury with a pungent hint of ammonia. 🦆 ;}
• Mapo Doufu Sauce: (can also be found as Mapo Tofu in Japanese cuisine) Ready-made meal bases. Avoid muted Western or Japanese variants; hunt for authentic Sichuan brands like Youjia or Dezhuang for legitimate numbing heat, or Lee Kum Kee for an omnipresent, reliable baseline.
• Chinkiang Black Vinegar: A deeply aged, malty rice vinegar. Earthy and slightly sweet; essential for making dipping sauces or cutting through heavy oils.
• Sichuan Peppercorns (Hua jiao): The dried hulls of a citrus fruit that produce a vibrating, electric, numbing sensation (*ma*) on the tongue rather than actual capsaicin heat.
• Fermented Black Beans (Douchi): Heavily salted, fermented soybeans that pack a massive, savoury umami punch. Foundational for classic black bean sauces.
• Chili Bean Paste (Doubanjiang): A dark, salty paste of fermented broad beans and fresh chilies. The soul of real Sichuan cooking, and was most of what was in that container in yer fridge, besides the mapo ;}
• Stinky Tofu: Deeply fermented brine-soaked tofu. Intense room-filling.. aroma 🦆, but the actual flavour is remarkably mild, rich, and creamy.

• Perilla Leaves (Kkaennip, also found in Japanese cuisine as 'Shiso'): Large, jagged green leaves from the mint family. They taste like a unique mix of anise, licorice, and basil. Excellent fresh as wrappers or pickled in soy and chili.
• Gochujang: Thick, savoury, and sweet-spicy fermented chili paste. 😋
• Gochugaru: Coarsely ground, vibrant red sun-dried chili flakes. Smoky, mildly sweet, and less intensely hot than standard Western pepper flakes.
• Kimchi: Lacto-fermented spicy cabbage or radish. Sharp, sour, and intensely garlicky.
• Doenjang: A thick, earthy, unapologetically salty fermented soybean paste with a much sharper funk than Japanese miso.
• Beondegi: Canned, seasoned, and boiled silkworm pupae. A traditional street snack with a nutty, juicy bite.

• Furikake: My fav all-purpose seasoning!! Dry condiment blends meant for shaking over rice. Usually contains toasted sesame seeds, shredded nori, salt, and various intense savoury accents.
• Seaweed Salad (Chuka Wakame / Hiyashi Wakame): The sweet, savoury, vibrant green gelatinous sesame-chili seasoned seaweed salad. (Available primarily at Fujiya, but likely too found in the deli or freezer sections at H-Mart, Fisgard Market, and Fairway Market).
• Natto: Whole soybeans fermented with *Bacillus subtilis*. Famous for its incredibly stringy, sticky texture and strong ammonia aroma 🦆, but has a rich, deeply savoury, complex flavour. Typically stores well in the freezer.
• Shichimi Togarashi: A 7-ingredient chili blend combining red pepper, dried orange peel, sesame seeds, ginger, hemp seed, nori, and poppy seeds.
• Umeboshi: Whole pickled plums. Intensely salty, fruit-forward, and extremely sour.
• Katsuobushi: Paper-thin shavings of skipjack tuna that have been skipped, smoked, and fermented into solid blocks. They move on hot food due to the rising steam.
• Miso: Fermented soybean paste ranging from mild, sweet white (*Shiro*) to deeply aged, salty red (*Aka*).

• Jackfruit: Canned young green jackfruit in brine. Very neutral flavour but possesses a stringy, dense texture that makes a plant-based stand-in for pulled or shredded meat.
• Pandan Leaf: Long blade-like leaves that release a highly aromatic, sweet, comforting vanilla-popcorn fragrance when bruised or simmered.

• Cheesy Natto Toast: Mix a packet of natto vigorously with its enclosed soy and mustard packets until frothy and stringy. Spread over a thick slice of sourdough bread, blanket completely with shredded mozzarella or white cheddar, and air-fry until the cheese is blistering.
• Furikake Avocado Toast: Mash a ripe avocado onto toasted sourdough with a tiny splash of rice vinegar. Top with a soft-boiled egg, a heavy dust of savoury Furikake mix, and a drizzle of toasted sesame oil.
• Samosa Wrap: Fill paratha or naan with spiced potato-pea masala. Fold, seal, and air-fry until crisp. Serve with mango chutney.
• Kimchi Grilled Cheese: Layer sourdough with sharp cheddar and chopped kimchi. Air-fry or broil until bubbling. Ok ok funny enough this was a Gordon Ramsay 'ultimate grilled cheese' recipe like what XD .. eh
• Miso-Eggplant Toast: Slice eggplant, coat with miso-sugar-mirin glaze, air-fry until tender. Serve over toasted bread with sesame seeds.
• Fermented Cabbage Bruschetta: Simmer sauerkraut or red cabbage in vinegar and goat’s milk. Spoon onto rye or sourdough and broil.

• Crispy Tteokbokki Skewers: Thread cylindrical Korean rice cakes onto wooden skewers. Air-fry at high heat until the skin bubbles into a light, crispy crust. Brush immediately with a glaze of gochujang, honey, and a splash of soy sauce.
• Century Egg & Tofu Cold Salad: Entirely no-cook. Lay a cold block of silken tofu on a plate. Slice a couple of Century Eggs (Pei daan) into quarters and arrange them around the sides. Drizzle the plate with Chinkiang black vinegar, light soy sauce, sesame oil, and crunchy chili crisp.
• Chickpea Flour Fritters (Pakora): Whisk besan (chickpea flour) with water, cumin, chili, and turmeric. Toss with thin-sliced onions or greens; air-fry into clusters.
• Paneer / Tofu Bites: Toss cubed paneer or firm tofu in tandoori or Korean BBQ spices. Air-fry hot until edges char.
• Buckwheat Noodle Patties: Bind cooked soba noodles with egg and minced scallions. Shape into rounds and air-fry until crisp. Finish with gochujang mayo.
• Asian Pancakes: Prepare thin Korean jeon or Chinese scallion pancake batter directly in the air fryer pan. Slice and serve over bread with chili-soy dipping liquid.
